Summer is here, and it’s hot in Vancouver … our thoughts have turned to lawn games and cool, refreshing summer cocktails. We thought we’d share one of our favourites with you. Of course, we’ve modified the standard recipe to suit our taste (strong, and not too sweet).
Place several leaves of mint in the glass, add the gin and muddle the mint. Add ice, then the rest of the ingredients and fresh juiced gingerroot to taste (a garlic press works, and a razor grater works well too). Garnish with the lemon, cucumber and more mint.
Note: if you can get good, strong, homemade ginger beer, you can make this drink without the fresh ginger and soda water … but it can be hard to find the good stuff.
*Pimm's is an interesting story: the Pimm's brand once represented six different drink products, each based on a different alcohol and flavoured with fruits, herbs and spices. The original was sold a tonic that aided digestion. Clearly it had a large, uh, medicinal popularity because brand is still around today. The Pimm's we refer to, Pimm's No. 1 cup, is gin based, and the only one readily available.
